Ingredients:
For the Sponge Cake:
4 large eggs
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon baking powder
Pinch of salt
For the Cream Cheese Filling:
8 oz cream cheese (softened)
1 cup heavy cream
½ cup powdered sugar
1 teaspoon vanilla extract
For the Strawberry Filling:
1 cup fresh strawberries (sliced)
2 tablespoons granulated sugar
For Decoration:
Crushed freeze-dried strawberries (optional)
Whole fresh strawberries for topping
Instructions:
Prepare the Sponge Cake:
Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
Beat the eggs and sugar together in a large bowl until fluffy and pale, about 5 minutes.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gently fold the dry ingredients into the egg mixture until fully combined.
Pour the batter into the prepared pan and spread evenly.
Bake for 10-12 minutes or until the cake is lightly golden and springs back when touched.
Allow the cake to cool completely on a wire rack.
Prepare the Cream Cheese Filling:
Beat the softened cream cheese and powdered sugar until smooth and creamy.
Add the heavy cream and vanilla extract, and continue to beat until light and fluffy.
Prepare the Strawberry Filling:
Toss the sliced strawberries with sugar and set aside for 10-15 minutes to release their juices.
Assemble the Rolls:
Once the sponge cake has cooled, carefully remove it from the pan and place it on a large piece of parchment paper.
Spread an even layer of cream cheese filling over the cake.
Layer the sugared strawberries on top of the filling.
Gently roll the cake up, starting from one edge, making sure to roll tightly to prevent the filling from spilling out.
Once rolled, cover and refrigerate for at least 1 hour to set.
Decorate and Serve:
After the rolls have chilled, slice into individual servings.
Garnish with a dollop of cream cheese filling, whole fresh strawberries, and crushed freeze-dried strawberries for extra texture and flavor.
