Southern Caramel Cake 🍰
Cake Ingredients
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 tsp vanilla extract
Caramel Frosting Ingredients
- 2 1/2 cups granulated sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter, cubed
- 1 tsp vanilla extract
Instructions
1. Prepare the Cake
- Preheat oven to 350°F (175°C).
- Grease and flour 3 round 8-inch cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Add dry ingredients to the butter mixture alternately with buttermilk.
- Stir in vanilla extract.
- Divide batter evenly between pans.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean.
- Let cakes cool completely before frosting.
2. Make the Caramel Frosting
- In a heavy saucepan over medium heat, melt the sugar slowly, stirring often until it turns a deep golden caramel color.
- Carefully add heavy cream (it will bubble). Stir until smooth.
- Add butter and mix until melted.
- Remove from heat and stir in vanilla.
- Let frosting cool slightly until thick enough to spread.
3. Assemble the Cake
- Place one cake layer on a serving plate.
- Spread caramel frosting over the top.
- Repeat with remaining layers.
- Frost the sides and top of the cake.
- Let set for about 20 minutes before slicing.
