🍗 Roast Turkey Dinner with All the Trimmings

Ingredients — serves 4–6

Turkey

  • 1.5–2 kg turkey breast or turkey crown
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp dried sage or thyme
  • Salt & black pepper
  • 1 cup chicken/turkey stock

Roast vegetables

  • 4 carrots, cut into chunks
  • 3–4 potatoes or sweet potatoes, chunked
  • 1–2 cups broccoli florets
  • 1 tbsp olive oil
  • Salt, pepper and a little dried thyme

Creamy mashed potatoes

  • 1 kg potatoes, peeled and cubed
  • 3–4 tbsp butter
  • ½ cup warm milk
  • Salt and pepper

Cauliflower cheese

  • 1 large cauliflower
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1½ cups grated mature cheddar
  • 1 tsp mustard
  • Salt and pepper

Sage sausage balls

  • 450 g pork sausage meat
  • 1 small onion, finely chopped
  • 1 tsp dried sage
  • ½ tsp black pepper
  • 2–3 tbsp breadcrumbs

Gravy

  • Turkey roasting juices
  • 2 tbsp flour
  • 2–3 cups chicken/turkey stock
  • Salt and pepper

👩‍🍳 Method

  1. Roast the turkey: Rub the turkey with butter, garlic, sage, salt and pepper. Place in a roasting pan with the stock. Roast at 190°C/375°F until the thickest part reaches 74°C/165°F. Rest for 20 minutes before slicing.
  2. Roast the vegetables: Toss carrots and potatoes with olive oil, salt, pepper and thyme. Roast alongside the turkey until golden and tender. Add broccoli during the final 15–20 minutes.
  3. Make the mash: Boil potatoes until tender, drain well, then mash with butter and warm milk. Season generously.
  4. Cauliflower cheese: Boil or steam cauliflower until just tender. Make a sauce by melting butter, stirring in flour, then gradually whisking in milk. Add cheddar and mustard. Pour over cauliflower and bake at 200°C/400°F for 15–20 minutes, until bubbling and golden.
  5. Sage sausage balls: Mix sausage meat, onion, sage, breadcrumbs and pepper. Roll into small balls and bake at 200°C/400°F for about 20–25 minutes, turning once.
  6. Gravy: Pour the turkey pan juices into a saucepan. Whisk flour into a little of the fat, then gradually add the stock and roasting juices. Simmer until thick and glossy.

🍽️ To serve

Pile up the turkey, mash, roasted carrots, broccoli, cauliflower cheese and sage sausage balls, then pour over lashings of hot gravy. 😋

Tip: For that rich, glossy gravy like the one in the photo, add a small knob of butter at the end and whisk it in just before serving.
