Instructions
1. Sauté the Aromatics & Chicken
- In a large heavy pot or deep pan, melt butter and olive oil on medium heat.
- Add onion and sauté 3–4 minutes until soft and golden.
- Add garlic and cook 1 minute until fragrant.
- Add the chicken cubes.
- Season with salt, pepper, paprika, and thyme.
- Cook until the chicken is no longer pink (about 5–6 minutes).
- Chicken does not need to be fully cooked — it will finish in the rice.
2. Add Rice & Liquids
- Add in the uncooked rice and stir to coat it in the butter and spices for 1 minute.
- Pour in the chicken broth and milk.
- Stir well, scraping the bottom so nothing sticks.
- Bring mixture to a light boil.
3. Simmer the Casserole
- Reduce heat to low, cover the pot with a lid, and cook for 15 minutes.
- Stir halfway through to prevent sticking.
- After 15 minutes, the rice should be almost cooked and the mixture slightly thick.
4. Add the Broccoli
Choose fresh or frozen:
- Fresh broccoli: Add during the last 8 minutes of cooking.
- Frozen broccoli: Add during the last 5 minutes.
Stir again and cover.
5. Make it Cheesy & Creamy
- Turn heat to low.
- Add:
- Cheddar cheese
- Mozzarella (optional)
- Parmesan
- (Optional) Cream cheese for extra richness
- Stir until everything melts into a creamy, thick casserole.
6. Optional Oven Finish (For Browned Top)
- Sprinkle more cheese or crushed crackers on top.
- Place under the broiler for 2–3 minutes until golden.
- Watch carefully — it browns fast!
