Meatloaf
- 2 lbs ground beef
- 1 small onion, finely diced
- 3 cloves garlic, minced

- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
Mashed Potatoes
- 2½ lbs potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup warm milk
- ½ tsp salt
- ¼ tsp black pepper
Brown Gravy
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups beef broth
- 1 tsp Worcestershire sauce
- ½ tsp onion powder
- ¼ tsp black pepper
- Salt, to taste

- Make the meatloaf:
Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, and seasonings. Mix gently until just combined. - Shape & glaze:
Shape the mixture into a loaf and place it in a lightly greased baking dish or loaf pan. Mix the glaze ingredients and spread half over the meatloaf. - Bake:
Bake for 45 minutes. Spread the remaining glaze over the top and bake for another 15–25 minutes, or until the center reaches 160°F (71°C). - Rest:
Remove from the oven and let the meatloaf rest for 10 minutes before slicing. - Make the mashed potatoes:
Boil potatoes in salted water for 15–20 minutes, until fork-tender. Drain well. Mash with butter, warm milk, salt, and pepper until creamy. - Make the gravy:
Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Gradually whisk in beef broth. Add Worcestershire sauce, onion powder, and pepper. Simmer for 5–7 minutes, stirring occasionally, until thickened. Season with salt to taste. - Serve:
Slice the meatloaf and serve alongside a generous scoop of creamy mashed potatoes. Pour the rich brown gravy over everything and garnish with fresh parsley. 🍖🥔✨
