Mashed Potato Pancakes with Meat Filling

Ingredients

For the meat filling:

  • ½ lb (225 g) ground beef or ground chicken
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika (optional)

For the potato mixture:

  • 4 medium potatoes, peeled and cubed
  • 1 egg
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper

For frying:

  • 2–3 tbsp vegetable oil

Instructions

  1. Cook the potatoes
    • Boil potatoes in salted water until tender (15–20 minutes).
    • Drain and mash until smooth.
    • Let cool slightly, then mix in the egg, flour, salt, and pepper.
  2. Prepare the filling
    • Heat olive oil in a skillet over medium heat.
    • Sauté onion for 2–3 minutes.
    • Add garlic and cook for 30 seconds.
    • Add ground beef or chicken and cook until browned.
    • Season with salt, pepper, and paprika.
    • Let the filling cool.
  3. Form the pancakes
    • Divide the potato mixture into 8 portions.
    • Flatten one portion into a disc.
    • Place 1–2 tablespoons of meat filling in the center.
    • Cover with another thin potato disc or fold the potato mixture around the filling.
    • Seal the edges well and gently flatten.
  4. Fry
    • Heat oil in a large skillet over medium heat.
    • Fry pancakes for 3–4 minutes per side until golden brown and crispy.
    • Transfer to a paper towel-lined plate.
  5. Serve
    • Garnish with chopped parsley.
    • Serve hot with sour cream, garlic sauce, or your favorite dipping sauce.
