Mashed Potato Pancakes with Meat Filling
Ingredients
For the meat filling:
- ½ lb (225 g) ground beef or ground chicken
- ½ small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (optional)
For the potato mixture:
- 4 medium potatoes, peeled and cubed
- 1 egg
- 2 tbsp all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper
For frying:
- 2–3 tbsp vegetable oil
Instructions
- Cook the potatoes
- Boil potatoes in salted water until tender (15–20 minutes).
- Drain and mash until smooth.
- Let cool slightly, then mix in the egg, flour, salt, and pepper.
- Prepare the filling
- Heat olive oil in a skillet over medium heat.
- Sauté onion for 2–3 minutes.
- Add garlic and cook for 30 seconds.
- Add ground beef or chicken and cook until browned.
- Season with salt, pepper, and paprika.
- Let the filling cool.
- Form the pancakes
- Divide the potato mixture into 8 portions.
- Flatten one portion into a disc.
- Place 1–2 tablespoons of meat filling in the center.
- Cover with another thin potato disc or fold the potato mixture around the filling.
- Seal the edges well and gently flatten.
- Fry
- Heat oil in a large skillet over medium heat.
- Fry pancakes for 3–4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate.
- Serve
- Garnish with chopped parsley.
- Serve hot with sour cream, garlic sauce, or your favorite dipping sauce.
