🥩 Homemade Beef Stroganoff
Ingredients:
- 1½ lbs (680 g) beef sirloin or stew meat, cut into thin strips
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 oz (225 g) mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard (optional)
- 1 tsp paprika
- Salt and black pepper, to taste
- 1 cup sour cream (room temperature)
- 12 oz (340 g) egg noodles
- Fresh parsley, chopped (for garnish)
👩🍳 Instructions
- Cook the egg noodles according to package directions. Drain and set aside.
- Heat the butter and olive oil in a large skillet over medium-high heat.
- Season the beef with salt and pepper, then sear for 2–3 minutes until browned. Remove and set aside.
- In the same skillet, sauté the onion for 3–4 minutes. Add the garlic and mushrooms and cook until the mushrooms are browned.
- Sprinkle the flour over the vegetables and stir for 1 minute.
- Gradually whisk in the beef broth, then add the Worcestershire sauce, Dijon mustard, and paprika. Simmer for 5 minutes until the sauce thickens.
- Return the beef to the skillet and cook for 2–3 minutes, until heated through.
- Reduce the heat to low and stir in the sour cream. Do not boil after adding the sour cream.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
