Garlic Parmesan Chicken and Potatoes

Ingredients:

2 chicken breasts

4–5 small or medium-sized potatoes

3 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon Italian seasoning (optional)

3 cloves garlic, minced

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes: Wash and cut them into bite-sized cubes. In a large bowl, toss the potatoes with 1½ tablespoons olive oil, salt, pepper, garlic powder, and paprika. Spread them on one side of a baking sheet.
  3. Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Drizzle with the remaining olive oil.
  4. Add to the pan: Place the chicken on the other side of the baking sheet.
  5. Bake for 25–30 minutes, or until the chicken is fully cooked and the potatoes are golden and tender.
  6. Add garlic and Parmesan: In the last 5 minutes, sprinkle minced garlic and Parmesan cheese over the chicken and potatoes, then return to the oven until cheese melts and edges are crisp.
  7. Garnish with chopped parsley and serve warm.

Serving suggestion:

Serve with a side of steamed vegetables or a simple green salad for a complete meal.
