Ingredients:
2 chicken breasts
4–5 small or medium-sized potatoes
3 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon Italian seasoning (optional)
3 cloves garlic, minced
¼ cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes: Wash and cut them into bite-sized cubes. In a large bowl, toss the potatoes with 1½ tablespoons olive oil, salt, pepper, garlic powder, and paprika. Spread them on one side of a baking sheet.
- Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Drizzle with the remaining olive oil.
- Add to the pan: Place the chicken on the other side of the baking sheet.
- Bake for 25–30 minutes, or until the chicken is fully cooked and the potatoes are golden and tender.
- Add garlic and Parmesan: In the last 5 minutes, sprinkle minced garlic and Parmesan cheese over the chicken and potatoes, then return to the oven until cheese melts and edges are crisp.
- Garnish with chopped parsley and serve warm.
