Slow cooker beef stew
Ingredients:
500g beef stew meat (cut into small cubes)
3-4 medium-sized potatoes (peeled and cubed)
3 carrots (peeled and sliced)
1 onion (chopped)
2-3 garlic cloves (minced)
4 cups beef broth (or water + beef bouillon cubes)
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp black pepper
1 tsp salt (adjust to taste)
1 tbsp tomato paste
1 bay leaf
2 tbsp cornstarch (optional, to thicken the gravy)
Method:
1. Prepare ingredients: Add all the ingredients to the slow cooker – beef, potatoes, carrots, onion, garlic, and tomato paste.
2. Add seasoning: Add the thyme, rosemary, salt, pepper, and bay leaf.
3. Add broth: Pour in the beef broth (or water + bouillon cubes) and give everything a good stir.
4. Cook: Set the slow cooker to low for 7-8 hours, or high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
5. Thicken the gravy (optional): If you’d like the gravy to be thicker, mix 2 tbsp of cornstarch with 2 tbsp of water and stir it into the slow
