Ingredients:
- 1½ lbs beef sirloin or tenderloin, thinly sliced
- 12 oz egg noodles
- 8 oz mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon all-purpose flour
- 1 cup sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Method:
- Cook the egg noodles according to package directions. Drain and set aside.
- Season the beef with salt, pepper, and paprika.
- Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear the beef in batches for 1–2 minutes per side. Remove and set aside.
- Add the remaining butter, onion, and mushrooms to the skillet. Cook for 5–7 minutes until softened and golden.
- Add the garlic and cook for 30 seconds. Sprinkle in the flour and stir for 1 minute.
- Slowly pour in the beef broth and Worcestershire sauce, stirring until the sauce begins to thicken.
- Reduce the heat to low. Stir in the sour cream and Dijon mustard until smooth.
- Return the beef to the skillet and simmer gently for 2–3 minutes. Do not boil, or the sour cream may separate.
- Spoon the creamy beef and mushroom sauce over the egg noodles.
- Garnish with fresh parsley and serve hot. 🥩🍄🍜
