Ingredients

  • ¾ cup butter, softened
  • ½ cup powdered sugar
  • ¼ tsp salt
  • 1¾ cups all-purpose flour
  • 6 oz butterscotch chips
  • 1 cup finely chopped pecans

Rum Glaze

  • 3 cups powdered sugar
  • 3–4 tbsp milk or water
  • 1 tsp rum extract

Topping

  • ½ cup chopped pecans

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Cream the softened butter, powdered sugar, and salt until light and fluffy.
  3. Gradually mix in the flour.
  4. Stir in the butterscotch chips and 1 cup finely chopped pecans.
  5. Shape the dough into small balls, using about 1 scant teaspoon per cookie.
  6. Place on an ungreased baking sheet about 1 inch apart.
  7. Bake for 15–20 minutes, until firm but still pale. Don’t let them brown.
  8. Cool completely on a wire rack.
  9. Mix the powdered sugar, rum extract, and milk/water until smooth.
  10. Dip or drizzle the glaze over the cookies, then sprinkle with chopped pecans. Let the glaze set.

Tip: If you’re making hundreds for Christmas, the dough can be prepared in batches, while the finished cookies keep well in an airtight container. 🎄🍪
