Sweet, spicy, crispy chicken meets sizzling veggies and golden fried rice in one epic pan dinner!
Ingredients:
1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon paprika
½ teaspoon garlic powder
Salt and black pepper, to taste
3 cups cooked and cooled rice
2 tablespoons butter
2 eggs, lightly beaten
1 cup mixed vegetables (peas, carrots, corn)
3 green onions, chopped
Bang Bang Sauce:
½ cup mayonnaise
¼ cup sweet chili sauce
2 tablespoons sriracha (adjust to taste)
1 tablespoon honey
Instructions:
- Prepare the sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Set aside.
- Cook the chicken: Heat vegetable oil in a large pan over medium-high heat. Add chicken, paprika, garlic powder, salt, and pepper. Cook until golden and crispy. Remove from the pan and set aside.
- Scramble the eggs: In the same pan, melt butter, pour in the beaten eggs, and scramble. Push to one side.
- Add veggies and rice: Add mixed vegetables and rice to the pan. Stir-fry for 3–4 minutes until heated through.
- Combine: Add the cooked chicken back to the pan and drizzle with the Bang Bang sauce. Toss everything together until evenly coated.
- Garnish: Top with green onions and an extra drizzle of sauce if desired.
