Ingredients
For the apple cake:
- 3 medium apples (peeled and diced)
- 3 eggs
- 150 g sugar (¾ cup)
- 100 ml vegetable oil (⅓ cup + 1 tbsp)
- 200 ml milk (¾ cup + 1 tbsp)
- 250 g flour (about 2 cups)
- 10 g baking powder (2 tsp)
- 1 tsp vanilla extract
- Pinch of salt
- 1 tsp cinnamon (optional)
For the crunchy topping:
- 80 g brown sugar (⅓ cup)
- 60 g flour (½ cup)
- 50 g cold butter
- 1 tsp cinnamon
Instructions
- Preheat oven to 180°C (350°F). Grease a round baking dish.
- In a bowl, whisk eggs with sugar until slightly creamy. Add oil, milk and vanilla.
- Mix flour, baking powder and salt separately, then add to the wet ingredients. Stir gently until combined.
- Fold in the diced apples and cinnamon.
- Pour the batter into the baking dish.
- Make the topping:
- Mix flour, brown sugar and cinnamon.
- Rub in cold butter with your fingers until you get crumbs.
- Sprinkle over the cake.
- Bake for 35–45 minutes until golden and a toothpick comes out clean.
- Let it cool slightly and serve warm.
Optional:
- Add walnuts or pecans for extra crunch.
- Serve with a scoop of vanilla ice cream or a drizzle of caramel sauce.
Result: a moist apple pie + coffee cake combination with a buttery cinnamon crust.
