🥩 Homemade Beef Stroganoff

Ingredients:

  • 1½ lbs (680 g) beef sirloin or stew meat, cut into thin strips
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 1 cup sour cream (room temperature)
  • 12 oz (340 g) egg noodles
  • Fresh parsley, chopped (for garnish)

👩‍🍳 Instructions

  1. Cook the egg noodles according to package directions. Drain and set aside.
  2. Heat the butter and olive oil in a large skillet over medium-high heat.
  3. Season the beef with salt and pepper, then sear for 2–3 minutes until browned. Remove and set aside.
  4. In the same skillet, sauté the onion for 3–4 minutes. Add the garlic and mushrooms and cook until the mushrooms are browned.
  5. Sprinkle the flour over the vegetables and stir for 1 minute.
  6. Gradually whisk in the beef broth, then add the Worcestershire sauce, Dijon mustard, and paprika. Simmer for 5 minutes until the sauce thickens.
  7. Return the beef to the skillet and cook for 2–3 minutes, until heated through.
  8. Reduce the heat to low and stir in the sour cream. Do not boil after adding the sour cream.
  9. Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
