Southern Caramel Cake 🍰

Cake Ingredients

  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 tsp vanilla extract

Caramel Frosting Ingredients

  • 2 1/2 cups granulated sugar
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, cubed
  • 1 tsp vanilla extract

Instructions

1. Prepare the Cake

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour 3 round 8-inch cake pans.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Add dry ingredients to the butter mixture alternately with buttermilk.
  7. Stir in vanilla extract.
  8. Divide batter evenly between pans.
  9. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  10. Let cakes cool completely before frosting.

2. Make the Caramel Frosting

  1. In a heavy saucepan over medium heat, melt the sugar slowly, stirring often until it turns a deep golden caramel color.
  2. Carefully add heavy cream (it will bubble). Stir until smooth.
  3. Add butter and mix until melted.
  4. Remove from heat and stir in vanilla.
  5. Let frosting cool slightly until thick enough to spread.

3. Assemble the Cake

  1. Place one cake layer on a serving plate.
  2. Spread caramel frosting over the top.
  3. Repeat with remaining layers.
  4. Frost the sides and top of the cake.
  5. Let set for about 20 minutes before slicing.
