No-bake chocolate eclair

No-Bake Chocolate Eclair Cake 🍫✨

Ingredients:

2 packs (about 400 g) of graham crackers or tea biscuits

2 boxes instant vanilla pudding mix (170 g)

3 cups cold milk

1 cup heavy whipping cream

½ cup powdered sugar

1 tsp vanilla extract

200 g melted chocolate or chocolate ganache


Instructions:

  1. In a large bowl, whisk together the pudding mix and cold milk until thickened.
  2. In another bowl, beat the heavy cream with powdered sugar and vanilla until soft peaks form.
  3. Gently fold the whipped cream into the pudding mixture until smooth and creamy.
  4. In a rectangular dish, arrange a single layer of graham crackers at the bottom.
  5. Spread a layer of the cream mixture on top, then repeat with alternating layers of crackers and cream.
  6. Pour the melted chocolate or ganache over the final cream layer and spread evenly.
  7. Cover and refrigerate for at least 4 hours (or overnight) for best texture and flavor.

Serving Tip:

Cut into squares, serve chilled, and garnish with chocolate shavings or toasted nuts for extra elegance.
