Ingredients
- 2 cups shredded sweetened coconut
- Β½ cup sweetened condensed milk
- 1 tsp vanilla extract
- ΒΌ tsp salt
- 1Β½ cups dark or semi-sweet chocolate chips
- 1 tsp coconut oil or shortening
- Extra shredded coconut, for topping
Method
- Make the coconut filling: In a bowl, mix shredded coconut, condensed milk, vanilla, and salt until well combined.
- Shape: Scoop out small portions and roll them into bite-sized balls. Place them on a parchment-lined tray.
- Chill: Refrigerate for 30β45 minutes until firm.
- Melt the chocolate: Melt the chocolate chips with coconut oil in the microwave in 20β30 second intervals, stirring between each, until smooth.
- Coat: Dip each chilled coconut ball into the melted chocolate, making sure itβs completely covered. Place back on the parchment.
- Decorate: Sprinkle with shredded coconut while the chocolate is still wet.
- Set: Refrigerate for 15β20 minutes, or until the chocolate is completely firm.
- Serve: Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator. π₯₯β¨
