🥩 Beef, Eggs & Chips

Ingredients
- 4 thick slices cooked beef (roast beef or silverside)
- 4 large eggs
- 700 g potatoes
- 1 can baked beans (400 g)
- 2 tbsp vegetable oil or beef dripping
- Salt & black pepper
- HP Sauce, to serve
Method
- Make the chips: Peel potatoes and cut into chunky chips. Rinse and dry very well.
- Toss with oil and salt, then air-fry at 200°C for 20–25 minutes, shaking several times, until golden and crisp.
Or deep-fry until beautifully golden. - Heat the beans gently in a saucepan, stirring occasionally.
- Heat the beef: If using leftover roast beef, warm the slices gently in a little gravy or a covered pan so they don’t dry out. If using cooked silverside/corned beef, simply warm through.
- Fry the eggs: Heat a little oil in a frying pan. Crack in the eggs and cook until the whites are set while keeping those yolks lovely and runny. 🍳
- Divide the chips, beef, eggs and baked beans between two plates.
- Finish with plenty of salt, pepper and HP Sauce.
Best served with: a mug of tea and absolutely no messing about! 😂☕🥩🍳🍟
