Carrot muffins
Ingredients:
• 2 cups flour
• 1 cup sugar
• 1 cup grated carrots
• 2 eggs
• ½ cup oil
• ½ cup milk
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• ½ tsp salt
• 1 tsp vanilla
Instructions:
- Mix eggs, sugar, oil, milk, and vanilla.
- Add grated carrots.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Mix dry ingredients into wet (don’t overmix).
- Pour into muffin cups.
- Bake at 180°C for 18–22 minutes.
