Carrot muffins

Ingredients:

• 2 cups flour

• 1 cup sugar

• 1 cup grated carrots

• 2 eggs

• ½ cup oil

• ½ cup milk

• 1 tsp baking powder

• ½ tsp baking soda

• 1 tsp cinnamon

• ½ tsp salt

• 1 tsp vanilla

Instructions:

  1. Mix eggs, sugar, oil, milk, and vanilla.
  2. Add grated carrots.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Mix dry ingredients into wet (don’t overmix).
  5. Pour into muffin cups.
  6. Bake at 180°C for 18–22 minutes.
