Crockpot Cabbage Roll Casserole
Ingredients
- 1 large head cabbage, chopped
- 1 lb ground beef or ground turkey
- 1 cup uncooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, chopped (optional)
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth or water
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- In a skillet over medium heat, cook the ground beef or turkey with the onion and garlic until browned. Drain excess grease.
- Add the chopped cabbage to the crockpot.
- Stir in the uncooked rice, cooked meat mixture, diced tomatoes, tomato sauce, broth, paprika, Italian seasoning, salt, and pepper.
- Mix everything well so the rice is covered with liquid.
- Cover and cook:
- Low: 6–7 hours
- High: 3–4 hours
- Check the rice and cabbage for tenderness. Add a little extra broth if needed during cooking.
- Sprinkle shredded cheese on top during the last 10 minutes if desired.
Serve warm with crusty bread or a side salad.
