Crockpot Cabbage Roll Casserole

Ingredients

  • 1 large head cabbage, chopped
  • 1 lb ground beef or ground turkey
  • 1 cup uncooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped (optional)
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth or water
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef or turkey with the onion and garlic until browned. Drain excess grease.
  2. Add the chopped cabbage to the crockpot.
  3. Stir in the uncooked rice, cooked meat mixture, diced tomatoes, tomato sauce, broth, paprika, Italian seasoning, salt, and pepper.
  4. Mix everything well so the rice is covered with liquid.
  5. Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  6. Check the rice and cabbage for tenderness. Add a little extra broth if needed during cooking.
  7. Sprinkle shredded cheese on top during the last 10 minutes if desired.

Serve warm with crusty bread or a side salad.
